Here at Airds we believe that fresh, local produce is right at the heart of excellent food and it is one of the reasons why our restaurant has gained such a strong reputation. With such amazing Scottish seafood right on our doorstep we are in the enviable position of being able to choose the fish we select on a daily basis, ensuring that we only get the best!
Quality is so key to us when choosing our local suppliers and we are uncompromising in our efforts to achieve excellence at all times. We work hard to establish long standing relationships with our suppliers who must share our commitment to produce the high quality, locally sourced, with known provenance, that we demand. Nothing is compromised when it comes to our guests.
Here are just a few of our local suppliers, many of whom we have consistently used for years, so maintaining that strong bond between us and ensuring they only deliver the best.
The Airds Garden
We are fortunate to have the space to be able to grow much of our own vegetables and herbs in our very own polytunnel. Les, our gardener, meets with the Head Chef on a regular basis to check what he wants him to grow and ensuring that seasonality is at the heart. There is nothing nicer for a Chef then to pop out to their own kitchen garden to pick their own produce - nothing is fresher than this!
This is a local family run business based in Oban on the west coast of Scotland and provides The Airds with fresh Scottish vegetables that we either are not able to grow ourselves or simply not grow in sufficient quantities. Their freshness is guaranteed as we get a daily delivery.
Andy Race - seafood
We have used Andy Race for a considerable number of years. Based in Mallaig on the West Coast, they have the advantage of having first pick of the boats arriving daily into Mallaig which is very quickly transported down to the Airds restaurant.
Inverawe Smokehouse - smoked Scottish Salmon
Inverawe Smokehouse is a family business situated near Taynuilt, in Argyll. They have won many awards including a Royal Warrant for their fantastic smoked salmon and the secret to its fantastic flavour and texture is the traditional slow wood smoking. To smoke their salmon they use oldstyle brick kilns and allow the fish to gently take up the gorgeous smoky aroma providing the most delicious full-bodied oak-smoked flavour.
Again JR Fine Foods is a Scottish family owned and run business and The Airds has used them consistently for over 10 years as they provide quality cheeses with great variety. Chef can often be seen emerging from the van laden with some of the best cheese Scotland and the continent.
One of the leading Scottish Butchers, Kennedys Butchers have supplied The Airds for many many years and we have always been proud to be associated with them. They stand by the high quality of products and service they provide and are in fact one of the very few butchers these days to actually go to market themselves. We mainly buy their beef which is unrivalled anywhere which is hung specifically for us for a minimum of 28 days
CJ Seafoods - local shellfish & fish
Based in Taynuilt, just 30 minutes from the hotel, CJ Seafoods supply us with fantastic fish and shellfish all locally caught in the waters in and around the Isle of Mull. Again, operating a door to door service means that we get the fish just out the sea fresh.
